A father, teacher & mezcalero, Don Jose Hilario was a pillar in his community. In 2021, at the age of 81, the master distiller passed away. He imparted ancesteral mezcal wisdom to his son Abdias, who still utilizes techniques of fermenting in hide, hand milling & distilling in a tree trunk. He also left behind just over 10 liters of Pechuga de Mole Poblano, which he created in 2012. This batch was crafted with agave papalometl & distilled a third time with a seasoned chicken breast, mole Poblano, & a secret blend of fruits, nuts & spices. We were only able to import 27 bottles of this truly unique expression.

We visit and build personal relationships with all mezcaleros we purchase from. The producers we collaborate with belong to families that have been crafting traditional agave spirits for at least three generations. They utilize stills with a capacity of 250 liter or less. No two batches are ever the same.
